The Mezcal Margarita
The Margarita That Smells Like a Campfire (In the Best Way Possible)
Some cocktails instantly divide people.
The Mezcal Margarita?
Definitely one of them.
At Worthington’s Bar, this is one of those drinks where the reactions are always incredibly dramatic.
For Joy?
Mezcal is a genuine obsession.
For Britt?
The very first sip led to the sentence: “Why does this taste like liquid cigarettes?”
And honestly…
That’s a pretty accurate description if you’ve never had mezcal before.
Because mezcal is:
- Smoky
- Earthy
- Intense
- Funky
- And completely unlike anything else behind the bar
You usually either fall in love immediately or question every life decision that led to that first sip
There’s rarely an in-between.
Joy’s First Mezcal Experience
The Cocktail That Started the Obsession
Joy’s first mezcal experience happened years ago during a night out with her brother.
He introduced her to mezcal at a cocktail bar, and instead of easing into it gently…
The bartender made a Mezcal Old Fashioned. Which is honestly a pretty bold introduction.
But somehow?
It worked immediately.
The smoke.
The depth.
The warmth.
The complexity.
It felt completely different from anything tequila could do on its own.
And ever since then, mezcal has become one of those “special occasion spirits” at Worthington’s Bar.
Not necessarily an everyday bottle.
But absolutely one of the most exciting ones.
So naturally, a Mezcal Margarita had to happen.
And to this day, it remains one of Joy’s favorite margaritas in the entire lineup.
Still not Britt’s favorite, though.
(Some things never change.) She’s warming up to a Mezcal Paloma, though, so there’s progress! But that’s a story for another time. 😉
What Is a Mezcal Margarita?
A Smoky Twist on the Classic Margarita
At its core, the Mezcal Margarita is beautifully simple.
You take a Classic Margarita and swap Tequila for Mezcal.
That’s it.
But that single change completely transforms the drink.
Where a classic margarita feels:
- Bright
- Crisp
- Fresh
- Citrus-forward
The Mezcal Margarita becomes:
- Smoky
- Earthy
- Deeper
- More layered
- And slightly mysterious
It’s still refreshing.
Still balanced.
Still recognizable as a margarita.
But now it has an attitude.
What Exactly Is Mezcal?
Not Just “Smoky Tequila”
This is probably the biggest misconception around mezcal.
While tequila and mezcal are related, they are not the same spirit.
Tequila can only be made from blue agave.
Mezcal, however, can be made from Many different agave varieties.
But the biggest difference is the production method.
Traditional mezcal production involves roasting agave hearts in underground pits lined with hot stones.
That roasting process creates mezcal’s signature:
- Smoke
- Earthiness
- Funkiness
- And a deep roasted character
That’s the flavor people either become obsessed with or compare to an ashtray.
Again: there’s really no middle ground.
The Mezcal We Used – Del Maguey Vida
One of the Best Entry Points Into Mezcal
For this cocktail, we used Del Maguey Vida.
In the Netherlands, mezcal availability is still fairly limited compared to tequila. There aren’t endless affordable options on every shelf yet.
But Del Maguey Vida has become one of the easier bottles to find here that still offers:
- Great quality
- Authentic mezcal character
- And a reasonable price point
Which makes it perfect for cocktails.
It brings:
- Smoke
- Citrus
- Peppery notes
- Earthiness
- And just enough funk without becoming overwhelming
Especially in a margarita.
Because while some mezcals are incredible for sipping they can be too intense for mixing.
Vida hits a really nice balance.
Ingredient Breakdown – What Makes This Cocktail Work
Mezcal – The Star of the Show
Everything revolves around the mezcal here.
It brings:
- Smoke
- Warmth
- Earthiness
- Roasted agave flavor
- And huge personality
Compared to tequila, mezcal feels:
- Wilder
- More rustic
- More layered
- And much more intense
This is what gives the cocktail its unforgettable identity.
Lime Juice – The Brightness
Fresh lime juice is absolutely essential in a Mezcal Margarita.
Why?
Because mezcal is naturally rich and smoky.
Without enough acidity, the drink would feel:
- Heavy
- Dense
- And overly earthy
Fresh lime cuts through all of that beautifully and keeps the cocktail crisp, vibrant, and refreshing.
Triple Sec – The Balance
Triple sec softens the edges of the cocktail.
It adds:
- Sweetness
- Citrus oils
- Roundness
- And smoother transitions between flavors
Without it, the mezcal can become a little too aggressive for some people.
(Especially if you’re Team Britt.)
Salt Rim – Essential, Not Optional
Few cocktails benefit from salt as much as a Mezcal Margarita.
Salt enhances:
- Smoke
- Citrus
- Agave flavor
- And overall balance
It ties the entire cocktail together.
A Mezcal Margarita without salt feels incomplete.
Flavor Profile – What to Expect
First Sip: Smoke & Citrus
The very first thing you notice is the smoke.
Immediately.
But then the lime kicks in and brightens everything up before the drink becomes too heavy.
The opening sip feels:
- Bold
- Sharp
- Smoky
- And incredibly interesting
Mid-Palate: Earthy Depth & Balance
As the drink develops, the mezcal starts opening up more fully.
You get:
- Roasted agave
- Peppery warmth
- Citrus sweetness
- And earthy complexity
This is where the cocktail starts feeling sophisticated, layered, and slightly addictive.
Finish: Lingering Smoke & Warmth
The finish is long, warm, and unmistakably mezcal-forward.
You’re left with:
- Gentle smoke
- Dry citrus
- Agave warmth
- And a slightly savory edge
It’s the kind of cocktail that stays with you long after the sip ends.
Which is exactly why mezcal fans love it so much.
Why Mezcal Margaritas Feel So Different
Smoke Changes Everything
Smoke affects cocktails differently than sweetness or acidity.
It adds:
- Texture
- Depth
- Aroma
- And a completely different emotional feel
A classic margarita feels beachy, sunny, and carefree.
A Mezcal Margarita feels more moody, late-night, sophisticated, and slightly dangerous.
It completely changes the energy of the drink.
And honestly?
That’s why people become obsessed with it.
How to Build the Perfect Mezcal Margarita
Keep It Cold & Balanced
A few tips make a huge difference:
Use Plenty of Ice
Cold temperatures help control the intensity of the smoke.
Shake Properly
Good dilution softens the sharper edges of mezcal beautifully.
Use Fresh Lime Juice
Bottled lime juice flattens the cocktail immediately.
Don’t Over-Sweeten
This drink works because of balance, not sugar.
Use a Good Salt Rim
Especially flaky sea salt or coarse salt.
It dramatically improves the overall experience.
Common Mezcal Margarita Mistakes
Using Low-Quality Mezcal
Bad mezcal tastes:
- Harsh
- Burnt
- And aggressively smoky
Good mezcal tastes:
- Balanced
- Earthy
- Layered
- And intentional
Treating Mezcal Like Tequila
They behave differently in cocktails.
Mezcal needs:
- More balance
- More dilution
- And slightly more restraint
Not Using Enough Lime
Acidity is what keeps the drink alive.
Without enough lime, the cocktail becomes muddy fast.
Why Mezcal Has Become So Popular
Cocktail Culture Loves Bold Flavors
Over the last few years, people have started moving away from overly sweet cocktails and looking for drinks with:
- Complexity
- Smoke
- Savory notes
- Texture
- And stronger personalities
Mezcal fits perfectly into that movement.
It feels:
- Authentic
- Rustic
- Slightly rebellious
- And incredibly memorable
And once people “get” mezcal? They usually get really into mezcal.
